Step 1: Mix together flour and seasonings.
Step 2: Place seasoned flour on a paper plate and dredge steak thoroughly on both sides.
Step 3: Set aside 1/4 cup flour for making a roux.
Step 4: Heat oil over medium high heat in a large fry pan, until shimmering.
Step 5: Brown floured steaks until a nice crust has formed.
Step 6: Remove steaks to a platter.
Step 7: Turn heat to medium and add 1/4 cup reserved flour, stirring constantly until roux is a light caramel color (5 or 6 minutes).
Step 8: Remove pan from heat and stirring constantly, add broth and Worchestershire sauce.
Step 9: Place skillet back on heat and stir until gravy is thick.
Step 10: Add steaks and flip to coat and top with onions.
Step 11: Cover pan, reduce heat to low and simmer for 1 to 1/14 hours until meat is fork tender.
Step 12: Serve with mashed potatoes, rice or noodles.
