Ingredients

The ingredients are:
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup melted butter
  • 380 grams eggnog (1 1/2 cups)
  • 3 cups all-purpose flour
  • 1 tablespoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2/3 cup chopped pecan nuts (or walnuts)
  • 190 grams glazed mixed fruit (1 cup, OR 1 cup candied cherries)

  • Walnuts and Raisin (soaked in either water (to plump) or Apricot Brandy

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Beat sugars and egg in mixing bowl.

  • Step 3: Beat in melted butter. (I like to add some rum extract for extra flavour)

  • Step 4: Add eggnog and mix.

  • Step 5: Sift flour, baking powder, salt, cinnamon and nutmeg over eggnog mixture.

  • Step 6: Stir until moistened.

  • Step 7: Mix in nuts and fruit.

  • Step 8: Turn into greased 9x5x3" loaf pan.

  • Step 9: Bake for about 1 hour until an inserted wooden pick comes out clean.

  • Step 10: Let stand for 20 minutes.

  • Step 11: Turn out onto rack and cool.

  • Step 12: This recipe freezes well.
