Ingredients

The ingredients are:
  • Dressing:
  • 1/2 cup mayonnaise
  • 1 head roasted garlic (see note below on how to roast garlic)
  • 3 tablespoons grated parmesan cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Salad:
  • 2-3 romaine hearts, cut in half lengthwise (don't remove the end)
  • 1 teaspoon olive oil (per romaine half)
  • Salt and pepper
  • Garnish:
  • Croutons (I prefer a homemade crouton; but a seasoned store bought brand is fine. I break mine up over the salad)

How to Make

  • Step 1: Garlic ... Easy roasted garlic. Cut off the top of the garlic, just a small slice and drizzle with olive oil. About 1 teaspoon. Wrap in foil and put in a 400 degree oven for approximately 30-40 minutes until the garlic is tender and soft. Let it cool, and then squeeze out the garlic into a small bowl.

  • Step 2: Dressing ... Add all the ingredients for the dressing to the garlic and mix well. I prefer to use a small tupperware container so I can just add everything, mix, seal and refrigerate; then when ready to serve you can just shake it and it's ready. It is perfect to make ahead of time.

  • Step 3: Romaine ... Drizzle both sides of the romaine halves with 1/2 teaspoon olive oil and season well with salt and pepper. Grill the romaine, outside part first, just a minute or two. Then flip over and finish grilling on the cut side - about 2 minutes. You want it tender, but not completely wilted, it should still have some crisp to it. This can be done on an outside grill or indoor grill pan.

  • Step 4: Serve ... Top with the dressing and crushed croutons. ENJOY!
