Step 1: Dissolve sugar in the water over a low heat, add the cherries, cinnamon and lemon zest and bring to the boil, reduce heat, and simmer until very syrupy (This will take about 20 minutes).
Step 2: Remove cherry mix from the heat when syrupy and thick enough.
Step 3: Add lemon juice and brandy.
Step 4: Allow mix to cool, and keep until ready to serve.
Step 5: Serve over your favourite ice-cream.
