  • The following recipe serves 4-8 people.

Ingredients

The ingredients are:
  • 9 ounces cooked chicken (2 cups cooked chicken, diced or shredded)
  • 3 cups baby spinach (long tough stems removed, and rough chopped)
  • 1 medium yellow onion (small diced)
  • 1 garlic clove, minced
  • 9 ounces dry egg noodles (4 cups uncooked wide noodles, I use the No YOLK brand)
  • 2 cans (10 ounce) condensed low-sodium cream of celery soup
  • 1/2 cup sour cream
  • 8 cups low-sodium chicken broth
  • 2 tablespoons sherry (or white wine, optional; just skip if you don't want to use it)
  • 1/4 cup chopped parsley
  • All purpose seasoning (salt-free, 1 teaspoon)
  • Kosher salt to taste
  • Pepper to taste
  • 2 teaspoons olive oil
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Onions ... Add the olive oil to a large soup pot; and bring to medium heat. Add the onions and garlic, and saute the onions, for 3-5 minutes, stirring often. Do NOT let the garlic burn. Then, add the broth and bring up to a light boil.

  • Step 2: Noodles ... Add the noodles, and cook according to package directions, about 4-5 minutes shy of being done (about 7-9 minutes)

  • Step 3: Soup Base ... To the broth and noodles; add the soup, chicken, seasoning, a pinch of salt and pepper - and mix to combine. Bring back up to medium heat, just under a boil; and cook another 4 minutes. You want everything heated through; and, the noodles tender, but NOT mushy - they will continue to cook in the broth and soak up juice; so, don't over cook them.

  • Step 4: Finish ... Remove from the heat, add the spinach, sour cream, parsley; and, stir until everything is combined. Season again, only if needed with salt and pepper. Stir, cover, and let it set a couple of minutes until the spinach is wilted. You want the spinach to have a little texture. The heat of the soup will easily wilt the spinach.

  • Step 5: Serve and ENJOY! ... Crusty bread and a side salad is all that is needed. It really is an under 30 minute soup. It isn't too healthy; but, it sure is good comfort food; and really easy to make.
