Ingredients

The ingredients are:
  • 3 pounds pears (8 Anjou pears, peeled, halved and cored)
  • 8 tablespoons unsalted butter (cut into 1/2 inch cubes)
  • Kosher salt
  • 5 thyme sprigs
  • 2 bay leaves
  • 1/2 cup honey
  • Chilled heavy cream for serving or use chilled creme fraiche

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Line a rimmed cookie sheet with parchment paper and then arrange the pears cut-side-up in a single layer. Top each pear half with butter and season with salt. Scatter the thyme and bay leaves over the pears and drizzle with honey.

  • Step 3: Bake for one hour, turning every 15 minutes or until pears are carmalelized and tender.

  • Step 4: Transfer to a warmed dish and serve hot with chilled cream.
