Ingredients

The ingredients are:
  • 12 ounces frozen puff pastry (thawed, 1 sheet)
  • 8 teaspoons mustard (old fashioned)
  • 1/2 pound cooked chicken breasts (sliced, 2 large breasts)
  • 1/4 pound cherry tomatoes (thin sliced, may need more than 1/2 pound, not sure - original recipe called for using 4 Roma tomatoes, I'm using cherry)
  • 7 ounces cheese (Alfred Le Fermier 18 month cheese)
  • Freshly ground pepper
  • Fresh basil

How to Make

  • Step 1: Preheat oven to 450 degrees F.

  • Step 2: On a floured work surface, roll out the pastry dough into a 12x8-inch rectangle. Cut into 4 even squares. Place on a parchment-lined baking sheet.

  • Step 3: Brush each square with about 2 teaspoon mustard, then top with chicken slices, tomatoes and cheese. Season with pepper.

  • Step 4: Bake in oven for about 18 minutes or until dough is cooked and cheese is golden.

  • Step 5: Garnish with basil. Serve immediately.
