  • 4 large eggs (hard boiled)
  • 6 tablespoons mayonnaise
  • 1/8 cup minced shrimp
  • Tabasco (dash)
  • Salt (dash)
  • Pepper (dash)
  • 1 teaspoon lemon juice
  • FOR SAUCE
  • 1 can (15 ounce) tomatoes (pureed)
  • 1/3 cup minced yellow onions
  • 1/3 cup minced celery
  • 1/3 cup minced bell pepper
  • 1 tablespoon oil
  • 1 bay leaf
  • Thyme (dash)
  • 1 tablespoon cornstarch
  • 4 cups rice (cooked)
  • 1/8 cup chopped shrimp (cooked)

How to Make

  • Step 1: Saute veggies in oil, add rest of ingredients. Simmer sauce 15 minutes. Remove bay leaf.

  • Step 2: Divide eggs in half, mash everything but whites. Stuff into eggs.

  • Step 3: Plate 1 cup rice then pour sauce over rice. Top with 1 egg.

  • Step 4: Serve with shrimp on sides.
