Ingredients

The ingredients are:
  • 4 pound whole chicken
  • 3 tablespoons soy sauce
  • 1 yellow onion (chopped)
  • 5 garlic cloves
  • 2 tablespoons ginger
  • Star anise (3 pieces)
  • 6 cups water
  • FOR THE SAUCE
  • 3 garlic cloves, minced
  • 1 yellow onion (chopped)
  • 1 tablespoon minced gingerroot
  • 3 star anise
  • 2 tablespoons oyster sauce
  • 3 cups chicken stock
  • 1 cup snow peas
  • 2 carrots (flowerette, cut in fancy coins)
  • 1 cup shredded cabbage (napa)
  • 3 tablespoon brown sugar
  • 2 tablespoons oil (for frying)
  • 1 tablespoon cornstarch (dissolved)
  • 2 tablespoons water
  • 1 cup dried mushrooms (black mushroom ,Tengang Daga plumped in water 30 minutes add liquid to chicken stock)

How to Make

  • Step 1: Boil the whole chicken in soy sauce, onion, garlic, ginger, star anise & enough water to the chicken. Set aside and dry off.

  • Step 2: Fry the whole chicken in oil to brown the skin. Set aside.

  • Step 3: Saute onion, garlic, ginger and star anise in oil. Add oyster sauce, carrots and the mushroom. Add the liquid from the boiled chicken. Let it simmer. 15 minutes.

  • Step 4: Add in sugar and snow peas. Add the shredded cabbage.

  • Step 5: Thicken the sauce with the cornstarch and water slurry.

  • Step 6: Chop the chicken in serving sizes and arrange in a platter. Top it with vegetables and the sauce.
