Ingredients

The ingredients are:
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate baking chips (white)
  • 2 tablespoons butter
  • 1 cup granulated sugar
  • 3 tablespoons fresh lemon juice
  • 2 whole lemons (zest of)
  • 2 large eggs (lightly beaten)
  • 1/4 cup whole cranberries (fresh, washed and patted dry)
  • Powdered Sugar, for dusting

How to Make

  • Step 1: Preheat oven to 325F. Line 9x9 baking dish with foil, bringing the foil up over two sides of the pan.. Spray with non-stick cooking spray.

  • Step 2: Sift flour, salt and baking powder. Set aside.

  • Step 3: Melt white chocolate and butter in microwave for 15-30 seconds. Stir until free of lumps.

  • Step 4: In large bowl; mix sugar, lemon juice, zest, white chocolate mixture and eggs.

  • Step 5: Mix in dry ingredients.

  • Step 6: Pour batter into prepared pan. Arrange cranberries evenly into batter.

  • Step 7: Bake for 35-40 minutes or until a toothpick can be inserted and removed clean.

  • Step 8: Allow to cool.

  • Step 9: Remove foil and bars from pan. Peel away foil then dust with powdered sugar.

  • Step 10: Cut into 9 bars and serve.
