Step 1: Preheat oven to 375°F.
Step 2: Put the walnuts in a food processor and chop finely.
Step 3: Remove and set aside.
Step 4: Add flour plus the extra 1 tbs of flour, salt & pepper to the processor bowl.
Step 5: Cut the butter into small pieces and add to the flour mixture.
Step 6: Mix in short bursts until the mixture resembles fine breadcrumbs.
Step 7: Coarsely grate in cheese, add the reserved walnuts and mix quickly to form a dough.
Step 8: Turn mixture on to a lightly floured surface and roll out thinly.
Step 9: Using a 2 1/2 in round cookie cutter, cut the dough into rounds and place on baking trays.
Step 10: Brush the tops with beaten egg.
Step 11: Bake for about 10 minutes until golden.
Step 12: Cool and store in airtight container.
