Ingredients

The ingredients are:
  • 13 ounces cooked chicken (3 cups shredded, I use rotisserie or leftover grilled chicken)
  • 6 ounces cream cheese (softened)
  • 1/3 cup sour cream
  • 2 tablespoons cream cheese
  • 1/2 cup salsa (Picante sauce, medium is what I use)
  • 1 1/2 cups shredded cheddar cheese (sharp)
  • 1 1/2 cups chopped baby spinach (stems removed)
  • 1 small jalapeno pepper (OPTIONAL -seeded, minced OR use some hot sauce)
  • Salt and fresh black pepper, to taste
  • 270 to 300 grams tortillas (9-10 small flour, 6-inch size)
  • Vegetable or canola oil, for frying
  • FOR SERVING - YOUR CHOICE
  • Sour cream
  • Quacamole
  • Salsa/taco sauce
  • Ranch dressing

How to Make

  • Step 1: In a large bowl mix together the first 8 ingredients. Season to taste with salt and pepper.

  • Step 2: Working with one tortilla at a time add 2 heaping tablespoons of the chicken mixture off center and spread out like a log. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled.

  • Step 3: Add enough oil to a large skillet to generously cover the bottom of skillet. Heat on medium to medium-low heat. Fry taquitos in batches, turning frequently to brown each side (watch closely these brown very quickly!). Remove to paper towels to drain.

  • Step 4: Serve with your choice of items.
