Ingredients

The ingredients are:
  • 14 ounces zucchini (2 medium, ends removed, julienned)
  • 2 pounds squash (2 yellow summer squash, ends removed, julienned)
  • 2 carrots, peeled and julienned
  • 1 broccoli stem, (not the flowers, use just the hard long stem, peeled and julienned)
  • 4 scallions (white and green parts), julienned
  • 1/3 cup chopped fresh parsley
  • Sweet & Tart Dressing (1/2 cup, plus more to taste)
  • Salt and freshly ground black pepper, to taste
  • FOR SWEET & TART DRESSING
  • 3 tablespoons oil (canola or vegetable)
  • 1/2 cup white vinegar
  • 1/2 cup apple cider
  • 1/4 to 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

How to Make

  • FOR THE DRESSING

  • Step 1: In a jar with a sealable lid, add all the dressing ingredients; shake until well combined or until sugar dissolves.

  • FOR SALAD

  • Step 2: In a large bowl, combine the zucchini, yellow squash, carrots, broccoli, scallions, and parsley, and dressing. Season with salt and pepper and toss to mix. Taste for seasoning, adding more dressing if desired. Cover and refrigerate until ready to serve.
