Step 1: Place caster sugar in a heavy-based saucepan with 1 cup water.
Step 2: Bring to the boil, stir to dissolve sugar and simmer for 1 min. Remove from heat and allow to cool while you juice the lemons.
Step 3: In a large jug, combine the lemon juice, cooled sugar syrup and 4 cups of cold water. (You may need more or less water according to your taste).
Step 4: Stir to combine well and chill in the fridge before serving with plenty of ice. Garnish with thin slices of lime and mint sprigs.
