Ingredients

The ingredients are:
  • 90 grams butter (finely diced)
  • 2/3 cup all-purpose flour (plain)
  • 2 tablespoons rice flour
  • 3/4 cup cheese, finely grated (mix cheddar and parmesan)
  • 1 tablespoon snipped fresh chives

How to Make

  • Step 1: Preheat oven to 180°C (160°C fan forced). Line two large baking trays. Place the butter and flours into a food processor & blend until the mixture just comes together.

  • Step 2: Add the cheeses and chives and blend again until combined. Transfer mixture to a clean work surface and bring together to form a ball. Chill briefly (if needed) then roll out dough to form a log. Wrap in plastic wrap and continue to roll and shape to a log that is about 24cm long and 4cm wide. Chill if needed. Remove plastic and cut into rounds 1cm thick.

  • Step 3: Place rounds on prepared tray and sprinkle with a little water. Top each with cracked black pepper and sesame seeds.

  • Step 4: Bake for 15-18 min until lightly golden.

  • Step 5: Cool completely on trays before serving.
