Ingredients

The ingredients are:
  • 2 cups all-purpose flour (unbleached)
  • 1 cup cornmeal (yellow)
  • 2 teaspoons salt
  • 5 teaspoons baking powder
  • 1 1/2 cups firmly-packed brown sugar
  • 1/2 cup butter
  • 1 tablespoon butter (divided)
  • 5 large eggs (well beaten)
  • Milk (1% low-fat)

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Combine dry ingredients in a large bowl.

  • Step 3: Spray a 9X13-inch pan or large cast iron skillet with nonstick spray and place about 1 tablespoons butter in pan.

  • Step 4: Heat pan in oven until is melted to coat the bottom.

  • Step 5: Add eggs and butter to dry ingredients.

  • Step 6: Add enough milk so that batter is a little thicker than pancake batter.

  • Step 7: Pour in melted butter (from heated pan) and stir to combine.

  • Step 8: Pour batter into heated pan and bake for 30 to 35 minutes or until golden brown and a toothpick inserted in center comes out clean.
