Ingredients

The ingredients are:
  • 1/2 to 3/4 pound beef
  • 1/3 chopped chopped yellow onion
  • 1 jalapeno pepper (diced)
  • 2 to 3 garlic cloves, chopped finely
  • 1 can (10 ounce) whole green chilies (drained, chop a few for the top)
  • 2 1/2 cups grated cheddar cheese (divided)
  • 2 large eggs
  • 3/4 cups milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

How to Make

  • Step 1: Preheat oven to 375F and grease a small casserole dish.

  • Step 2: In a pan, cook hamburger meat with onion and jalapeno pepper until beef is browned then add in garlic, cook 2-3 minutes. Drain, then add cumin, salt, and pepper.

  • Step 3: Line the bottom of your pan with whole green chiles (chop up extra green chiles for later).

  • Step 4: Layer meat over green chiles. Top with 1 1/2 cups cheddar cheese and chopped green chiles.

  • Step 5: Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. Topp with 1 cup cheddar cheese.

  • Step 6: Bake for 35 to 40 minutes.

  • Step 7: Serve right away while everything is hot and cheese is melted. Yum!
