Ingredients

The ingredients are:
  • Assorted greens (12 ounces, such as radicchio, watercress and spinach or your favorite greens)
  • 1 shallot, minced
  • 1 tablespoon chopped herbs (your favorite herbs and/or parsley)
  • 1/4 cup olive oil
  • 2 tablespoons sherry vinegar
  • Kosher salt
  • Pepper
  • 6 ounces cheddar cheese (crumbled, 1 cup)
  • 3/4 cup pecan nuts (toasted)
  • 1 apple (green, cored, quartered and sliced using a mandolin)
  • 1 apple (red, cored, quartered and sliced on a mandolin)

How to Make

  • Step 1: Wash greens and spin dry. Refrigerate in an airtight container with a damp towel over them to absorb excess moisture until ready to use (can be refrigerated overnight)

  • Step 2: In a large salad bowl put greens and then add the shallots and herbs; toss. Drizzle oil and vinegar over salad; season with salt and pepper. Add cheddar and pecans; toss.

  • Step 3: Divide among 4 plates and arrange apples over the salads. Drizzle with oil and vinegar and season with salt and pepper.
