Ingredients

The ingredients are:
  • 4 ounces bacon (4 slices, halved)
  • 1 1/2 pound elk meat (or beef chuck steak, trimmed and cubed)
  • 1 quart water
  • 1/2 cup water
  • 1 1/4 cup chopped yellow onions
  • 1/4 t oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 18 ounces potatoes (3 potatoes, peeled and diced)
  • 2 carrots, peeled and diced
  • 5 to 6 ounce turnip (1 large turnip, diced)
  • 1/4 cup hazelnuts, finely ground (or acorn meal)
  • HAZELNUT DUMPLINGS
  • 1/2 cup hazelnuts, finely ground (or acorn meal)
  • 1/2 cup whole wheat flour
  • 1 3/4 teaspoon baking powder
  • 1 large egg (beaten)
  • 2 tablespoons milk
  • 2 tablespoons oil (vegetable oil)

How to Make

  • Step 1: In a large skillet over medium heat, cook bacon until some of its fat is rendered.

  • Step 2: Add elk and brown with the bacon.

  • Step 3: Add 1 quart of water, onion, bay leaves,oregano,pepper and salt. Cover and simmer for 1 1/2 hours.

  • Step 4: Add potatoes, carrot and turnip and cook 30 minutes longer.

  • Step 5: Combine remaining water with hazelnut meal and stir into the simmering stew.

  • FOR THE DUMPLINGS

  • Step 6: In a bowl, combine dumpling ingredients and beat until smooth.

  • Step 7: Drop by tablespoonfuls into the simmering stew.

  • Step 8: Cover tightly and steam 12 to 15 minutes.
