Step 1: Combine all ingredients (except for coconut oil) in a small bowl, adding enough water to make it thin enough for a pancake.
Step 2: Pour coconut oil into a heated skillet (on medium). Add batter and cook until lightly browned and done on one side. Flip and cook on the other side until lightly browned.
Step 3: Serve immediately with syrup or other toppings.
