Ingredients

The ingredients are:
  • 1/2 pound shrimp (medium shrimp, shelled and deviened)
  • 1 1/2 tablespoons butter (or margarine)
  • 1 1/2 teaspoons olive oil
  • 1 large garlic clove, minced
  • 4 tablespoons Tequila
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 3 tablespoons coarse chopped fresh cilantro
  • 1 1/2 cups cooked rice

How to Make

  • Step 1: Rinse and pat shrimp dry with paper towels.

  • Step 2: Heat butter and oil in medium skillet (I use a wok), over medium heat.

  • Step 3: When butter is melted, add garlic and cook 30 seconds.

  • Step 4: Add shrimp; cook 2 minutes, stirring often.

  • Step 5: Stir in tequila, lime juice, salt and red pepper flakes.

  • Step 6: Cook 2 minutes or till shrimp is pink and glazed.

  • Step 7: Add cilantro and cook 10 seconds, serve over hot rice.
