Step 1: Walnuts ... Add the nuts to a small dry saute pan on medium heat. Cook 3-4 minutes until you start to smell them, stirring often. Once you can smell them, it pretty much means they are done. You do NOT want them to burn. Transfer to a plate or paper towel to cool.
Step 2: Spread ... Add everything to a food processor (just a pinch of salt and pepper); and, pulse until creamy and smooth. Taste and re-season with more salt and pepper if necessary. Store in a mason jar or tupperware type of container for up to 1 week.
Step 3: Serve and ENJOY! ... As I said; great on sandwiches, burgers, crostini; as an appetizer with vegetables, cheese or crackers. Also, great as a topping for chicken, steak, pork, seafood.
