Ingredients

The ingredients are:
  • 12 large eggs (beaten)
  • 1/2 cup whole milk (you can use reduced fat)
  • 4 ounces shredded cheddar cheese (sharp)
  • 6 to 7 ounces bacon (6 slices Canadian bacon, small diced)
  • 1/4 cup diced scallions (white and green parts)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Mix ... Add the eggs first; and beat until frothy and creamy. Then add all the other ingredients; and, beat or mix until combined.

  • Step 2: Bake ... Although you can use a regular size muffin tin for these; I love to use my mini muffin tin. Spray lightly with a non-stick spray; then, fill your tin. Bake on the middle shelf; in a 350 degree preheated oven. About 15-20 minutes for the mini muffins; or, 25-30 minutes for a classic sized muffin. Once the muffins are set, and firm to the touch; they are done. You can also stick a toothpick in the center ... if it comes out clean, they are done.

  • Step 3: Serve and ENJOY! ... They should pop right out of the pan. Then, plate and serve. Kids and adults both love them; and, they are just the perfect bite. As mentioned above; great for a breakfast bar with guests. But, also great on weekends, when everyone seems to get up at different times; and, everyone is on the go.
