Step 1: Peel all the garlic cloves.
Step 2: Add garlic, parsley 1/3 cup plus 2 tablespoons olive oil and 1/3 cup plus 2 tablespoons melted butter to a food processor or blender and process until combined.
Step 3: Slice (split) your Italian bread loaf in half (lengthwise).
Step 4: Spoon on your garlic oil mixture on your bread ensuring it's all covered.
Step 5: Season with salt and pepper.
Step 6: Wrap in foil and bake in preheated oven for 10 minutes at 200ºC or 400ºF.
Step 7: Remove bread from oven, unwrap from foil, cut it half so it's in two pieces and sprinkle on the grated mozzarella cheese.
Step 8: Top with freshly grated Parmesan cheese.
Step 9: Bake in oven on a baking sheet for a further 15 minutes or until cheese is brown at 200ºC or 400ºF .
