Ingredients

The ingredients are:
  • 1 tablespoon olive oil (or butter)
  • 1/3 cup chopped yellow onion
  • 8 ounces fresh spinach, rinsed and torn into pieces
  • 1 red bell pepper (seeded and chopped, about 1/2 cup)
  • 3 medium garlic cloves, minced
  • 1/4 teaspoon dried rosemary, crushed
  • 16 ounces cooked rice (3 cups cooked long-grain)
  • 1/2 cup fresh grated Parmesan cheese
  • 1/4 cup chopped pecans
  • Salt & pepper, to taste

How to Make

  • Step 1: Melt butter in a large skillet over medium heat; add yellow onions; saute until soft, about 3 minutes. Add in spinach, bell pepper and garlic; saute until tender, about 5 minutes. Add remaining ingredients and cook, stirring, until well blended and cheese is melted.
