  • The following recipe serves 3 people.

Ingredients

The ingredients are:
  • 9.6 to 12.8 ounces white tuna (1 1/2 to 2 packages, 6.4 ounce each, hunk white albacore tuna, use can also use a canned tuna, packed in water)
  • 4 cups baby arugula
  • SALAD
  • 1 can (15 ounce) beans (cannellini beans, use only 2/3 of a can, drained and rinsed)
  • 1 medium yellow onion (quartered and thin sliced)
  • 1/2 to 2/3 cup diced cucumber (I used a English or seedless cucumber)
  • 1/3 cup kalamata olives (cut in half, black olives also are good)
  • 2 avocado, diced
  • 2 teaspoons lemon juice
  • 1/2 cup crumbled feta cheese
  • DRESSING
  • 6 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3/4 to 1 teaspoon Italian seasoning
  • Kosher salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Dressing ... Add all the ingredients to a small cup or bowl, and mix to combine. Again, I dress my salads lightly; but, you can easily double the recipe according to your tastes.

  • Step 2: Salad ... First, squeeze the lemon juice over the avocado and lightly toss in a small bowl. This prevents them from turning brown. Then, add the arugula, beans, onion, cucumber (if using a classic cucumber; lightly seed and peel before dicing), olives, and half of the dressing to a salad bowl; and, toss to combine. Add the avocado; and toss lightly again - careful not to break up the avocado.

  • Step 3: Plate and Serve ... Plate up your salad, and top with the tuna and Feta cheese. Drizzle with the remaining dressing. Remember, you can plate 2 big salads; and 4 smaller salads. It just depends what else you plan to serve with this. Also, top with as much tuna as you like. As with any salad; the amount of each ingredient is flexible.

  • Step 4: ENJOY! ... Serve with crusty bread! This would be great served with a bowl of soup for dinner. Also, you could serve this family style on a big platter as well.
