Step 1: Dressing ... Add all the ingredients to a small cup or bowl, and mix to combine. Again, I dress my salads lightly; but, you can easily double the recipe according to your tastes.
Step 2: Salad ... First, squeeze the lemon juice over the avocado and lightly toss in a small bowl. This prevents them from turning brown. Then, add the arugula, beans, onion, cucumber (if using a classic cucumber; lightly seed and peel before dicing), olives, and half of the dressing to a salad bowl; and, toss to combine. Add the avocado; and toss lightly again - careful not to break up the avocado.
Step 3: Plate and Serve ... Plate up your salad, and top with the tuna and Feta cheese. Drizzle with the remaining dressing. Remember, you can plate 2 big salads; and 4 smaller salads. It just depends what else you plan to serve with this. Also, top with as much tuna as you like. As with any salad; the amount of each ingredient is flexible.
Step 4: ENJOY! ... Serve with crusty bread! This would be great served with a bowl of soup for dinner. Also, you could serve this family style on a big platter as well.
