Step 1: Put potatoes in a pot and cover with cold salted (a good pinch) water, bring to the boil over a high heat and once boiling turn to a simmer and cook till tender, depending on size of potatoes 30 to 45 minutes.
Step 2: In the meantime put sliced onions into a frypan/skillet and put enough oil in to coat them (I use my hands to lightly massage them and it separates the segments too), cook under a very low heat with a lid on the pan stirring occasionally until a golden brown (about 30 minutes).
Step 3: Drain potatoes, add butter and milk and mash to the consistency you like (I like it smooth) and then add salt and pepper to taste and finally stir through the caramelised onions and serve.
