Ingredients

The ingredients are:
  • 1 pound dried beans (pink beans)
  • 8 cups water
  • 2 teaspoons salt
  • 1 can (8 ounce) tomato sauce
  • 2 tablespoons oil
  • 1/2 cup chopped yellow onion
  • 1//2 cup chopped bell pepper
  • 2 tablespoons chopped cilantro
  • 1/2 pound squash (Hubbard squash, it said calabaza, West Indian pumpkin, cleaned, seeded, chopped)

How to Make

  • Step 1: Soak the beans per package directions over night. Drain the beans.

  • Step 2: Fry the onion and bell pepper in oil in the large pot. Add beans and the rest of the ingredients in a large pot.

  • Step 3: Bring the beans to a boil over high heat then lower to medium heat. Cook over medium heat for 1 1/2 hours. Stir occasionally to avoid sticking. The beans should be soft. If not, cook a little longer.

  • Step 4: If the beans become too thick you may add about 1/4 cup of water at a time to thin them out.
