The ingredients are:
  • 1 cup chopped beets (cooked)
  • 1 can (19 ounces) chickpeas (drained)
  • 1 clove garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon beet juice
  • 1/2 teaspoons cumin
  • Salt (pinch of)
  • 1/2 teaspoon pepper (pink pepper)
  • 3 tablespoons olive oil

How to Make

  • Step 1: Put everything but the olive oil into the bowl of a food processor and purée, add the olive oil in through the feed tube as it blends, until smooth.

  • Step 2: Taste and adjust seasoning if needed.

  • Step 3: If it’s too thick, add more water.

  • Step 4: Store in the fridge.
