Step 1: In a mini food processor, chop onions, garlic, pepper and cilantro.
Step 2: Add oil to a medium saucepan and saute the chopped ingredients about 2 minutes. Drain the beans, then add to the saucepan along with sofrito with 3/4 cup of water.
Step 3: Add tomato sauce, potato, seasoning.
Step 4: Cover and simmer on low for about 15 minutes.
Step 5: Remove bay leaf.
