Step 1: Sift the dry ingredients into a bowl, rub in butter and grated cheeses; mix to a soft dough with the lemon juice.
Step 2: Shape the mixture into a roll 38cm (15in) long, wrap in greaseproof paper, then in aluminium foil; refrigerate for a least 3 hors.
Step 3: Cut roll into slices 5mm (1/4in) thick and place on lightly greased oven trays.
Step 4: Bake in moderate oven for 15 minutes or until brown.
Step 5: Cool on trays and serve.
