  • 2 cups water
  • 8 ounces rice (1 cup dry long-grain)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1/4 cup chopped green onions
  • 1 tablespoon grated lemon zest
  • 2 tablespoons capers
  • 1 cup red bell pepper, diced
  • 1 cup chopped tomatoes (grape or cherry tomatoes)
  • 1/4 cup olives
  • 2 cans (6 ounce) tuna (albacore tuna, drained)

How to Make

  • Step 1: Bring water to a boil in a medium saucepan, add rice. Cover, reduce heat and simmer 15 minutes or until liquid is absorbed. Remove from heat, let stand for five minutes. Fluff with a fork, cool.

  • Step 2: Combine lemon juice, oil, onions, zest and capers in a large bowl; stir well. Stir in rice, bell peppers, olives and tuna. Cover and chill.
