  • 2 cups gluten-free flour (rice blend flour)
  • 1 1/2 cups granulated sugar
  • 2 teaspoons xantham gum
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 can (20 ounce) crushed pineapple (in juice undrained)
  • GOLDEN FROSTING
  • 3/4 cup granulated sugar
  • 3/4 cup evaporated milk (or coconut milk)
  • 1/2 cup butter (or coconut oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts
  • 1/2 cup flaked coconut

How to Make

  • Step 1: Cake: mix all ingredients stir well before put in wet ingredients. put in oiled 9x13 pan. Bake 30 minutes while warm make frosting

  • Step 2: Frosting: use large saucepan. it will bubble up then cook down.

  • Step 3: Combine sugar, milk, butter & vanilla. Bring to a boil stirring until mixture is thick. Stir in nuts & coconuts then frost cake while warm
