Ingredients

The ingredients are:
  • 5 to 6 ounces breakfast sausage
  • 1/4 cup minced white onion
  • 2 tablespoon minced mild green chili (canned)
  • 8 to 10 large eggs (beaten)
  • Salt
  • Pepper
  • 9 ounces flour tortilla (5 tortillas, 8-inch)
  • 5 ounces American cheese (4 slices)

How to Make

  • Step 1: Preheat a skillet over medium heat.

  • Step 2: Crumble the sausage into the pan, then add the onion; sauté the sausage and onion for 3 to 4 minutes or until the sausage is browned.

  • Step 3: Add in green chilies and continue to sauté for 1 minute more.

  • Step 4: Pour the beaten eggs into the pan and scramble the eggs with the sausage and vegetables. Season with salt and pepper.

  • Step 5: Heat up the tortillas by steaming them in the microwave in moist paper towels or a tortilla steamer for 20 to 30 seconds.

  • Step 6: Break each slice of cheese in half and position two halves end-to-end in the middle of each tortilla.

  • TO MAKE BURRITO

  • Step 7: Spoon 1/4 of the egg filling onto the cheese in a tortilla. Fold one side of the tortilla over the filling, then fold up about two inches of one end. Fold over the other side of the tortilla to complete the burrito (one end should remain open).

  • Step 8: Repeat with remaining ingredients. Serve hot with salsa on the side, if desired.

  • NOTE: I cool them then wrap individually in plastic wrap and keep them in the fridge, I warm one and then eat in the morning before I go to work or eat on the way to work
