Step 1: Rinse the cauliflower sprigs, place in large pot and boil in salted water for some 5 minutes or so until tenderish but still has a bite in the stalk;
Step 2: Drain, BUT reserving 150/200ml of the cooking water;
Step 3: Heat Grill to max
Step 4: Melt the butter in a small pan, stir in the flour and cook for a minute or so;
Step 5: Blend in the milk and bring to the boil, stirring until thickened, no lumps;
Step 6: Add the reserved cooking liquor, 100g cheese, pepper and mustard;
Step 7: Stir well until cheese melted;
Step 8: Place cauliflower into a greased baking dish, pour the sauce over and scatter the remaining cheese over the top;
Step 9: Sprinkle over the breadcrumbs and put cauliflower mixture under the hot grill until cheese on top is golden and bubbling;
Step 10: Meantime, fry bacon rashers until crispy;
Step 11: When cheese dish ready, sprinkle crispy bacon over the top and serve with crusty bread.
