  • 1 pound black beans (dry, soaked overnight)
  • 1 pound pork shoulder roast (cut in small cubes)
  • 4 cups water
  • 1 tablespoon oil
  • 6 ounces smoked sausage (2 links,3 ounce each, cut into coins)
  • 1 clove garlic, smashed
  • 1 yellow onion, sliced (browned in oil that you have browned pork in)

How to Make

  • Step 1: Brown garlic and pork in oil.

  • Step 2: Add beans and sausage; cover with water and cook 3 hours on low heat until beans and meat is tender, stirring every once in a while (may need more water). Add in browned onions.
