Ingredients

The ingredients are:
  • 1 1/4 pound broccoli florets (cut into small pieces)
  • 4 cups chicken broth
  • 1 medium yellow onion (peeled and chopped)
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 2 teaspoons curry powder (mild)
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons fresh lime juice
  • 8 lemon slices (optional)
  • 1/2 cup sour cream
  • 1 tablespoons fresh chives, snipped

How to Make

  • Step 1: Place the cut broccoli in a large saucepan along with the broth, onion, butter, salt, curry powder and pepper. Bring to a boil. Reduce heat and simmer, covered, for 8 to 12 minutes or until broccoli is just tender.

  • Step 2: Place about 1 1/2 to 2 cups of the mixture at a time into a blender container. Cover and blend until smooth. Pour into bowl or another large pan. Repeat with remaining mixture. BE CAREFUL. THE HOT LIQUID MAY SCALD YOU.

  • Step 3: Stir in the lime juice.

  • Step 4: Return to pan and reheat gently.

  • Step 5: Ladle into bowls and garnish with a lemon slice (optional), a dollop of sour cream and a sprinkling of snipped chives.
