Step 1: Preheat oven to 350F.
Step 2: Wash chicken and pat dry.
Step 3: Half the lemon and squeeze the juice over the top-stuff the squeezed lemon halves into the cavity.
Step 4: Liberally, sprinkle the chicken with seasoning on both sides.
Step 5: Place breast side down on a v-rack, placed over a roaster pan.
Step 6: Pour the chicken broth into the pan.
Step 7: Roast un-disturbed, until golden brown- about 1 hour , more or less.
Step 8: Using wads of paper towels, flip the chicken breast side up- sprinkle with more seasoning if needed.
Step 9: Roast again un-disturbed for about another hour, more or less, or until the drumstick moves very easily.
Step 10: Remove from the oven and let sit for 10 minutes before slicing.
