Step 1: In a large bowl, soak the bread in milk while cooking the onion.
Step 2: Sauté the chopped onion in the olive oil until soft. Add garlic, saute 1 minute. Cool slightly, then add to bread/milk mixture in the bowl.
Step 3: To the bowl, add ground chicken and all remaining ingredients (except tomatoes) and mix well. Form into 6 meatballs. Place into a small baking pan. Pour the fire-roasted tomatoes on top.
Step 4: Bake at 350º for 25 minutes, or until the internal temperature reaches 165°F.
