Ingredients

The ingredients are:
  • 3 ounces bread (fresh torn, no crust)
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 1/2 cup chopped yellow onion
  • 2 garlic cloves, minced
  • 1 pound ground chicken (mix of dark and white)
  • 1 large egg (lightly beaten)
  • 1/4 cup finely chopped flat leaf parsley
  • 2 tablespoons tomato paste
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 2 tablespoons capers (drained)
  • 1 teaspoon white vinegar
  • 1/4 teaspoon chili flakes
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 can (14 ounce) fire-roasted tomatoes (could use 2 cans)

How to Make

  • Step 1: In a large bowl, soak the bread in milk while cooking the onion.

  • Step 2: Sauté the chopped onion in the olive oil until soft. Add garlic, saute 1 minute. Cool slightly, then add to bread/milk mixture in the bowl.

  • Step 3: To the bowl, add ground chicken and all remaining ingredients (except tomatoes) and mix well. Form into 6 meatballs. Place into a small baking pan. Pour the fire-roasted tomatoes on top.

  • Step 4: Bake at 350º for 25 minutes, or until the internal temperature reaches 165°F.
