Step 1: Combine all the ingredients (mint - pink peppercorns) in a bowl.
Step 2: Thread lamb onto skewers and places the skewers in a 13 x 9 inch dish or a dish big enough to hold the skewers and pour marinade over; cover with plastic wrap and chill over night.
Step 3: Transfer the skewers to a baking sheet. Pour marinade into a saucepan.
Step 4: Prepare barbecue to medium high and sprinkle lamb with salt and pepper. Grill to desired doneness, turning (8-15 minutes). Transfer to a platter.
Step 5: Boil marinade for 5 minutes; strain and then spoon over the lamb.
