Ingredients

The ingredients are:
  • 1 cup mint leaves, chopped
  • 3/4 cup orange juice
  • 1/2 cup brown sugar
  • 1/4 cup sherry (I usually don't have sherry in the house so I use more juice or water)
  • 1/4 cup apple cider vinegar
  • 3 garlic cloves, chopped
  • 1 tablespoon orange peel, grated
  • 1 tablespoon fresh chopped gingerroot
  • 2 Szechuan peppercorns (I used regular peppercorns)
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon peppercorns, crushed (pink, I used regular peppercorns)
  • 1 1/2 pounds lamb (cut into cubes)

How to Make

  • Step 1: Combine all the ingredients (mint - pink peppercorns) in a bowl.

  • Step 2: Thread lamb onto skewers and places the skewers in a 13 x 9 inch dish or a dish big enough to hold the skewers and pour marinade over; cover with plastic wrap and chill over night.

  • Step 3: Transfer the skewers to a baking sheet. Pour marinade into a saucepan.

  • Step 4: Prepare barbecue to medium high and sprinkle lamb with salt and pepper. Grill to desired doneness, turning (8-15 minutes). Transfer to a platter.

  • Step 5: Boil marinade for 5 minutes; strain and then spoon over the lamb.
