Ingredients

The ingredients are:
  • 1/2 cup yellow onion, chopped
  • 1/2 cup chopped celery
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1/2 teaspoon baking soda
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 4 ounces sauerkraut (3/4 cup, rinsed and drained)
  • 2 cups half and half
  • 21 ounces cooked corned beef (2 cups, chopped)
  • 1 cup shredded swiss cheese
  • Salt and pepper to taste
  • Rye croutons, optional

How to Make

  • Step 1: Saute onion and celery in butter.

  • Step 2: Add broth and baking soda.

  • Step 3: Combine cornstarch and water, add to pan. bring to boil for 2 minutes, stir occasionally.

  • Step 4: Reduce heat add sauerkraut, cream and corned beef simmer and stir for 15 minutes.

  • Step 5: Add cheese, let melt.

  • Step 6: Add salt and pepper garnish with croutons.
