Step 1: In a mixing bowl whisk together the dry ingredients (flour - salt) and using two knives or a pastry blender cut in the butter until it is worked in but the butter still stays in small chunks.
Step 2: In a separate small bowl or cup whisk together half the egg, water and vinegar and pour into the flour mixture; mix until the dough comes together.
Step 3: Divide the dough into two disks 1 inch thick. Wrap tightly in plastic wrap and chill for at least one hour before rolling.
Step 4: You can use the other half of the egg to brush the top crust of the pie.
