Ingredients

The ingredients are:
  • 1 or 2 tablespoons olive oil
  • 1 yellow onion, finely chopped
  • 2 teaspoons cumin powder
  • 1 fresh green chili pepper (small and very finely chopped)
  • 6 cups chicken stock
  • 500 grams potatoes (peeled and finely diced, desiree)
  • 2 cups whole kernel corn (fresh, I use tinned and drained)
  • 1 cup green peas
  • 90 grams snow peas (thinly sliced)
  • 1/4 pound chicken breast (1 breast, poached and shredded, or leftover breast from B.B.Q. chicken)
  • 1 lime (juice of only)
  • Salt & fresh ground pepper
  • 2 tablespoons coriander, torn
  • 2 tablespoons spring onions, finely chopped

How to Make

  • Step 1: Place onion and oil in a large saucepan and cook gently until the onion softens.

  • Step 2: Add cumin & chilli and cook for 2 minutes, then add the stock and potatoes and simmer for 10 minutes.

  • Step 3: Add the corn, peas and snow peas and chicken then simmer for 4 minutes, when simmered add lime juice, salt and pepper.

  • Step 4: Served the soup garnished with the coriander and spring onions.
