Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup finely chopped yellow onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 3/4 pound ground turkey (raw)
  • 1 cup oats (steel cut oats)
  • 1/2 cup diced tomatoes (with juice, use canned)
  • 1 1/2 tablespoons tomato paste
  • 2 3/4 cups water (or chicken broth or half water and chicken broth)
  • SPICE MIX - combine all the spices in small bowl
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • ADD IN AFTER COOKING
  • 1/3 cup grated Parmesan cheese

How to Make

  • Step 1: In a medium sauce pot, heat the oil on medium heat. Add the onions, and cook until they are translucent. Add garlic, cook 1 minute. Add the peppers, and stir until all of the peppers are coated in oil. Add the ground turkey and season using half of the combined spices. Cook the turkey all the way through, until it reaches 165⁰ F.

  • Step 2: Add the oats and the remainder of spices, and stir well. Add the tomato paste, diced tomatoes, and broth or water, and stir well. Bring to a boil, and lower heat to low. Simmer uncovered for 25 minutes or until the oats are cooked (the liquid will begin to turn creamy and the oats will go from being crunchy to chewy). Stirring very often to prevent the oats from sticking. Stir with Parmesan cheese. Serve.
