Step 1: Season the pork with the salt and pepper. Heat 4 tablespoons oil in a heavy skillet over medium heat. Brown in batches and remove to bowl.
Step 2: Add remaining oil and saute over low heat the onions, carrots and apples. Stir until softened about 10 minutes, adding in the garlic the last 3-4 minutes.
Step 3: Add in the remaining ingredients, including the already cooked pork with it's juices. Bring to a boil, reduce heat and simmer until tender about 1 1/2 hourse.
Step 4: Remove bay leaf and serve over rice or egg noodles.
