Ingredients

The ingredients are:
  • 2 pounds pork shoulder, boneless and cut into 1 1/2 inch pieces
  • Salt and pepper
  • 6 tablespoons oil
  • 2 medium onions, diced
  • 4 medium carrots, diced
  • 2 medium apples, peeled and cut into 1/2 inch pieces
  • 2 tablespoons garlic, finely minced
  • 1 bay leaf
  • 1 cup canned tomatoes, diced
  • 2 cups chicken broth
  • 1 12 ounce beer
  • 2 tablespoons brown sugar, can use less

How to Make

  • Step 1: Season the pork with the salt and pepper. Heat 4 tablespoons oil in a heavy skillet over medium heat. Brown in batches and remove to bowl.

  • Step 2: Add remaining oil and saute over low heat the onions, carrots and apples. Stir until softened about 10 minutes, adding in the garlic the last 3-4 minutes.

  • Step 3: Add in the remaining ingredients, including the already cooked pork with it's juices. Bring to a boil, reduce heat and simmer until tender about 1 1/2 hourse.

  • Step 4: Remove bay leaf and serve over rice or egg noodles.
