Ingredients

The ingredients are:
  • 4 pounds New Mexico green chiles (if you use Anaheim chiles add 3-4 jalapeños)
  • 8 cloves garlic, roasted, peeled, and chopped
  • 4 teaspoons oregano, roasted and rubbed between your fingers)
  • 1 teaspoon cumin, ground
  • 2 teaspoons salt

How to Make

  • Step 1: Roast chiles (see description) under the broiler for 5 minutes or until blackened. Place in a plastic bag and allow to steam until cooled. Remove the blackened parts without washing.

  • Step 2: Place chiles and the rest of the ingredients in a food processor and chop (do not puree).

  • Step 3: If desired warm before using.
