Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1 tablespoon Vegemite
  • 1 tablespoon honey
  • 1 tablespoon snipped chives
  • Freshly ground black pepper, to taste
  • 8 ounces cherry tomatoes (8 tomatoes, halved)
  • 1/2 pound mushrooms (12-16 small button type mushrooms)
  • 4 large eggs (poached)
  • 4 ounces bread slices (4 slices sour dough or ciabatta, toasted)

How to Make

  • Step 1: Combine the oil, vegemite, honey, chives and pepper in a bowl. Add the tomatoes and mushrooms and toss well to coat.

  • Step 2: Transfer the vegetables to a paper lined baking tray and bake in a hot oven 200oC for 12 -15 minute. Poach you eggs during this time.

  • Step 3: Spoon vegetables onto a serving plate with the eggs and toasted ciabatta.

  • Step 4: Serve immediately.
