The ingredients are:
  • 1 1/2 pounds lean ground beef
  • 4 ounces dry white rice (dry, 1/2 cup)
  • 1/2 cup yellow onion, minced
  • 1/2 cup green bell pepper, minced (optional)
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 can (10.5 ounce) cream of tomato soup
  • 1 can (14 ounce) diced tomatoes (undrained)

How to Make

  • Step 1: In mixing bowl combine ground beef, rice, onion, green pepper, egg, salt and pepper. Mix well to blend.

  • Step 2: Shape meat mixture into 24 meatballs, about 1 1/2 inches in diameter. Place meatballs in slow cooker pot.

  • Step 3: Pour soup and tomatoes over meatballs.

  • Step 4: Cover and cook on low for 7-8 hours, or on high for 4-5 hours.
