Ingredients

The ingredients are:
  • 1/2 green bell pepper, seeded and sliced
  • 1/2 tomato, chopped
  • 2 green onions, sliced
  • 1/4 cup green beans (6 beans, cut into strips)
  • 1/4 cup black olives (6 olives, chopped)
  • 2 avocados, halved and pitted
  • 4 lettuce leaves
  • FOR THE DRESSING
  • 6 tablespoons oil (vegetable oil)
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon tarragon, dried and crumbled
  • 1/4 teaspoon salt
  • Pepper

How to Make

  • Step 1: In a dish combine the vegetables and olives (bell pepper - olives); marinate with the dressing for 30 minutes.

  • Step 2: On a serving dish arrange the avocado halves on top of lettuce leaves; and surround them with the marinated vegetables; add a teaspoon of the dressing on top of each avocado half and pass remaining dressing separately.

  • Step 3: To make the dressing: combine dressing ingredients in a jar and shake well. Chill until ready to use.
