Step 1: Beat the first 6 ingredients in a bowl until they are smooth and creamy, stir in the salmon and breadcrumbs.
Step 2: Refrigerate until the mixture is firm.
Step 3: Combine the almonds, onion and parsley.
Step 4: Mould the salmon mixture into 4 even size logs and roll in the almond mixture.
Step 5: Wrap the logs in plastic wrap and chill until required.
Step 6: Serve with savoury biscuits or crackers.
